Recipe for Buttermilk Pancakes

Based on a BBC recipe but:
No salt, used some wholemeal flour, less butter and half the sugar.

Ingredients

• 250g self-raising flour
• 100g wholemeal flour
• 1 tsp bicarbonate of soda
• 1 tbsp caster sugar
• 200ml buttermilk
• 400ml milk
• 2 eggs
• 60g melted butter
• 150g blueberries

Method

Sift the self-raising flour, bicarbonate of soda and caster sugar into a bowl, then add the wholemeal flour and blueberries.

Mix the buttermilk, milk, eggs and melted butter in a bowl or jug.

Add the wet mixture to the dry and stir to mix. Don’t go crazy mixing and don’t worry about lumps.

Notes I found that I prefer not to add the blueberries but have them with the cooked pancakes. Also, I have increased the self-raising flour to 300g for slightly thicker pancakes.
